Ingredients

  • 1 cup Beef Rub
  • ¼ cup yellow mustard
  • ¼ cup apple cider vinegar
  • ¼ cup water
  • ¼ cup brown sugar
  • 1 tbsp brown sugar (for basting mixture)
  • Your favorite BBQ sauce

Directions

  • Prep the Grill & Ribs
    • Start by preheating your grill to the smoke setting. While the grill heats, unwrap the ribs and remove the membrane on the bone side. This step helps the seasoning absorb better and results in more tender ribs.
  • Add the Binder
    • Coat both sides of the ribs with yellow mustard. This acts as a binder to help the seasoning stick and adds just a hint of tang without overpowering the flavor.
  • Season Generously
    • Liberally season one side of the ribs with half of your chosen rub (about ½ cup total). Let it sit for five minutes to soak in, then flip and season the other side. Give it another five minutes to settle before placing on the grill.

  • Start Smoking
    • Place the ribs on the grill, meat side up, and smoke for 45 minutes. While they cook, mix the apple cider vinegar, water, and 1 tablespoon of brown sugar for basting. Every 20 minutes, baste the ribs with this mixture to keep them moist and build flavor.
  • Turn Up the Heat
    • After 45 minutes, flip the ribs and baste again. Increase your grill temperature to 350°F. Continue cooking for another 45 minutes, basting every 20 minutes.

  • Steam & Finish
    • Once the ribs reach 150°F internal temperature, place them on foil. Pour over any remaining basting mixture, wrap them tightly, and move to the top rack of the grill to steam for 15 minutes. After steaming, remove the foil and check that the internal temp has reached at least 155°F.
  • Sauce & Caramelize
    • Brush both sides of the ribs with your favorite BBQ sauce. Place them back on the grill to caramelize, about 7–9 minutes total, flipping halfway through.
